Elizabeths' Grannys' Babotie

Elizabeth Watson
This is what my granny (my mum's mum) used to make on special occasions. My mom then made it for her family. My dad loved this dish,as growing up, he said the cooking was quite bland. He loved all my mum's cooking really but the spice and flavour of babootie was especially appreciated. Mum always served with extra banana slices, coconut and of course, Mrs Balls chutney.
We had a small family, just mom, dad, my sister and myself but dinner was always eaten together at the huge Imbuia dining table my dad had made himself. Dinner time was a special time of coming together and talking about our days. A great time of connection. Dad was taken from us way too soon, at 47 years old, I was 14 and my sister 19..this dish and memory is for him and our incredibly strong wonderful mom, a true lady
