Malva Pudding

Malva pudding is a baked cake or pudding of South African cuisine. It contains apricot jam and has a spongy caramelised texture. A cream sauce is always poured over it while it is hot, and it is usually served warm with cold custard and/or ice-cream. This is a firm favorite in traditional Afrikaans South African homes.

Ingredients Method

Ingredients
  

  • 1 tbsp margarine
  • 3/4 cup sugar
  • 1 full egg
  • 1 tablespoon vinegar
  • A pinch of salt
  • 1 tablespoon apricot jam
  • 1 teaspoon bicarbonate of soda
  • 1 cup milk
  • 1 cup cake flour
  • Sauce
  • ½ cup boiling water
  • ½ cup sugar
  • ⅓ cup margarine
  • 1 teaspoon vanilla essence

Method
 

  1. Mix everything together well.
    Pour the mixture into a greased baking dish.
    Bake for approximately 30 minutes at 180°C.
    Make the sauce using ingredients above
    Heat the sauce ingredients together until warm and the sugar has dissolved.
    Pour the warm sauce over the hot pudding.
    Serve with custard or cream.
